Meal Prepping Time! Part 1?

Every chance I get I will try to meal prep as our household is constantly on the go. This started when I had my aunty come and help me prep tons of meals that will work best for us. Even just have certain things ready in the freezer makes it that much easier!


My absolute favorite are the dump and go slow cooker meals!! If you are constantly on the go and rush rush rush, these are the way to go! Now yes the slow cooker can be a pain in the ass to clean, but so are dishes in general so what is really the difference!


Here are some of our household favorites!


Creamy Ham and Potatoes
Creamy Ham and Potatoes

Cook Time - 5hours

Ingredients

2 large red potatoes, cubed

1/3 cup cubed Velveeta

3/4 cup cubed fully cooked ham

1 tablespoon dried minced onion

2/3 cup condensed cream of celery soup, undiluted

2/3 cup 2% milk

1 tablespoon all-purpose flour

1/4 teaspoon pepper


Directions

In a greased 1-1/2-qt. slow cooker, layer the potatoes, cheese, ham and onion.


In a small bowl, combine soup and milk; whisk in flour and pepper. Pour over potatoes. Cover and cook on low until potatoes are tender, 5-6 hours. Stir before serving.



Tater Tot Casserole
Tater Tot Casserole

Cook Time - 6hours

Ingredients

2 pounds ground beef

1 large onion, chopped

1 pound sliced fresh mushrooms

3 garlic cloves, minced

2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted

1/2 teaspoon salt

1/2 teaspoon pepper

1 pound frozen cut green beans

1 bag (32 ounces) frozen Tater Tots

1 cup shredded cheddar cheese


Directions

In a large skillet cook beef over medium-high heat until no longer pink, 5-6 minutes, breaking into crumbles; drain and transfer to a 5-qt. slow cooker. Add onion and mushrooms to skillet; cook over medium-high heat until vegetables are tender, 8-10 minutes. Add garlic; cook 1 minute longer. Stir in condensed soup, salt and pepper. Place vegetable mixture in slow cooker; add green beans and stir to combine. Top with Tater Tots and cheese.


Cook, covered, on low 6 hours. Let stand, uncovered, 15 minutes before serving.



Beef Stroganoff
Beef Stroganoff

Cook Time - 6hours 15mins

Ingredients

2 pounds boneless beef chuck steak

1 pound sliced fresh mushrooms

2 medium onions, chopped

1 can (10-3/4 ounces) condensed golden mushroom soup, undiluted

2 tablespoons reduced-sodium soy sauce

2 tablespoons Dijon mustard

1 tablespoon Worcestershire sauce

3 garlic cloves, minced

3/4 teaspoon salt

1/2 teaspoon pepper

2 tablespoons cornstarch

2 tablespoons water

1 cup sour cream

Hot cooked egg noodles

Minced fresh parsley, optional


Directions

Cut steak into 3x1/2-in. strips. In a 5- or 6-qt. slow cooker, combine next 9 ingredients. Stir in steak strips. Cook, covered, on low until meat is tender, 6-8 hours.


Transfer steak to a serving dish; keep warm. Skim fat from cooking juices. Mix cornstarch and water until smooth; stir into cooking juices. Cook, covered, on high until thickened, 10-15 minutes. Stir in sour cream; pour over beef. Serve with noodles and, if desired, minced parsley.



Chicken & Mushrooms
Chicken & Mushrooms

Cook on Low for 6-8 hours.


In the crockpot, combine:

3-4 chicken breasts

1 can cream of mushroom (or cream of chicken soup)

1 can sliced mushrooms

Cook on Low for 6-8 hours.


Serve over rice or egg noodles.


So those are just the first few.. don't worry there will be more to come! We have busy lives, and I rely on my slow-cooker almost daily!


What is my favorite thing to make in the slow-cooker.. well out of this set of recipes my husband and daughters would be the beef stroganoff, but mine might be the chicken and mushrooms (but I LOVE mushrooms!!)
